From North Carolina bladesmith Charlie Ellis, crafted in concert with the matching High Frequency Chef 205mm, comes an exquisite petty chef knife in a size and classic profile to do it all. Beautifully balanced with a natural feel and comfortable fitting in the hand, the knife is sharp, hard, and strong for utility work across the kitchen. Cloaking the blade from the spine downward is Charlie's Ladder-W's damascus, forged together with a bar of 1084 carbon steel that forms the thin edge below convex bevels, etched for a deep, contrasted finish. The purposefully sculpted integral bolster flows in to rings of yellow G10 that surround a piece of Turkish Walnut, and on to the gorgeous piece of greed-dyed curly maple.

The Story
A long-time blacksmith and bladesmith, Charlie Ellis crafts one-of-a-kind chef knives at his North Carolina workshop. Drawn to making kitchen cutlery originally by the need in his own kitchen for reliable, high-quality blades, the knives Charlie produced quickly advanced beyond objects of his own use, and soon become objects of art and precision for others to enjoy. Function-first designs with integral bolsters, compound bevel geometry, sculpted handles, and unique materials and blade finishes, are noteworthy elements of many of the kitchen tools in our collection handmade by Charlie.
