Bob Kramer Meiji Chef 242mm

A true gem from Washington knifemaker Bob Kramer, this 242mm / 9.5" custom Meiji Chef Knife was handmade by Bob twenty years ago in 2002. The same qualities that make Mr. Kramer the preeminent culinary bladesmith of today are present in his early work, from balance to edge geometry, to clean, straight-forward designs that are built to use. This pre-owned knife has had only one owner who used the knife lovingly in the early years and has kept it in storage since. The knife was sharpened twice in those early days, once by Bob himself, and once by a sharpener local to the knife's original owner. The edge is in excellent shape, consistent, and razor sharp from tip to heel. The 60mm tall blade with convex bevels and distal taper along the spine is shaped from straight carbon steel. The three-part, D-shaped wa handle for right-handed chefs, with a dark hardwood in the rear, possibly cocobolo, a deep black spacer, likely ebony, and a polished brass bolster, is in excellent condition, with only a handful of minor marks to the wood primarily at the back edges only, and extremely light marks to the brass bolster which can be seen on close inspection. Cleaned and polished for this sale, the knife is in excellent overall condition. Paperwork verifying its purchase date can be provided.

Bob’s journey began with a decade-long stint working in professional kitchens. It was there that he took notice of the tools of the trade. Bob became determined to perfect the art of knife sharpening, and soon had his own sharpening business. But it was when he first learned to forge steel, originally a result of his desire to understand edge sharpening, that he discovered his true calling. And the rest, as they say, is history. For over 25 years since, Bob has pursued excellence in the creation of chef knives, pioneering damascus steel techniques, employing meteorite in his blades, and consistently setting new bars at the convergence of art and chef knives.
