Tojiro K-Tip Gyuto 180mm

This limited edition hand-forged K-Tip Gyuto from Tojiro's Free Forged Cooking Series features a 180mm blade in Japanese VG10 steel with a 63-layer damascus cladding. The distal taper, convex blade geometry that results in a thin, extremely sharp edge, and choice of handle materials results in a 5.7oz / 161g mid-size gyuto that balances beautifully right at the choil. An oval handle design with rosewood flanked by rings of white and black buffalo horn looks and feels fantastic in the hand. The curved blade rocks nicely and a pinch grip is as comfortable as any.

The Story

Tojiro designs and builds several collections of chef knives at their shop in the Japanese city of Niigata, long known for its knife and tool making expertise. This K-Tip Gyuto 180mm represents the pinnacle of their kitchen knives, hand-forged by a small team outside of the operations where many of their knives are produced. With a focus on edge performance, balance and longevity, the Free Forged Handmade Knife series features folded, san mai blades with damascus cladding and arrive in black Paulownia cases.
