Tojiro K-Tip Gyuto 240mm
From Tojiro's handcrafted Free Forged Cooking Series comes this limited edition 240mm K-Tip Gyuto in Japanese VG10 steel with a 63-layer damascus cladding. Built in an outpost of Tojiro's main Niigata shop, these hand-forged knives feature a forged and polished finish, a convex blade geometry that results in a thin, extremely sharp edge, and a rosewood and buffalo horn handle that combine to create a 6.6oz / 188g full-size gyuto that balances naturally just in front of the choil. The octagonal wa style handle has a classic look and is exceedingly comfortable in the hand. The curved blade rocks nicely and a pinch grip is as comfortable as any.
