Ancient bog oak and a dyed mammoth tooth spacer make this first knife in our shop by Joseph Schrum of Halcyon Forge an especially unique and beautiful tool. Handcrafted at Joe's shop in Sedalia, Missouri, this stellar chef knife features a 240mm / 9.45" forged blade shaped from a clean spring steel containing 1% carbon and only a touch of manganese to ensure excellent hardening, a steel very similar to the popular 1095. A full distal taper that thins the spine to just 1.6mm an inch from the tip and convex geometry make this 55mm tall full-size chef knife an outstanding daily user in any kitchen, for every task.

The Story

From St. Louis, Missouri, owner Joe Schrum of Halcyon Forge has built a loyal and passionate following for his outstanding chef knives, each hand-forged at the small shop he runs a few hours from his hometown. Focusing on recycled and locally sourced materials, each knife Joe creates is built for function and versatility, employing simple, traditional techniques in order to realize the best properties of each piece of steel or handle material, while producing beautiful, heirloom quality tools at the same time.
