Bog Oak Sujihiki 215mm

Forged in England by Dan Prendergast from house-made san mai with a 1.2210 carbon steel core and wrought iron cladding comes this custom chef / sujihiki by Dan Prendergast. Light, long and thin with a height of just 42mm at the heel, excellent for slicing and carving, the blade tapers to a tip that provides just a bit of flexibility for versatile and easy cuts at any angle. The bog oak handle is shaped simply in Don's version of a wa handle, tall and slim at the back, tapering toward the blade for a number of comfortable hand positions.

The Story

Dan's extensive background in metalwork, which has included making piano pedal springs, copper hop boilers as well as ironwork conservation and restoration for Kensington Palace and Canterbury Cathedral, gives him the knowledge, perspective and experience to create culinary tools whose simple beauty is derived from a focus placed squarely on function and time honored, traditional techniques. Forging, heat treating, tempering, carving and finishing each piece by hand in his central England workshop, Dan creates each element of each cutting tool himself by hand.
