Balancing just at the font of the handle where the knife's mass is concentrated and the spine measures almost 4mm wide, this workhorse chef knife is the go-to tools for the most demanding work, and the most detailed, precise cuts alike. Don's pronounced convex bevel geometry above a sharp, strong edge will chop efficiently and endlessly, while the blade's spine, rounded and polished, tapers steadily from above the heel to the aggressive, needle-like tip. The blade steel is 1095LM, hardened with clay and etched and polished to reveal a hamon. For comfort and control in a profile that Don executes beautifully, the handle is crafted from vintage Westinghouse grass epoxxy micarta with translucent G10 inlay and a pair of hand-peened stainless pins.
