San Mai Santoku 211mm

A beautiful and versatile new santoku from Jeramie 'Jezz' Heywood, this knife enjoys Jezz's new house-made san mai formula using 12c27 for the core cutting edge, with nickel and 1084 carbon steel cladding. The Swedish made 12c27 is known for its high corrosion and stain resistance, excellent toughness and edge retention, and ability to sharpen easily, making it a nicely balanced steel for daily use. A thin edge below convex bevels and a profile that rocks nicely on the board with a very fine tip for detail work make the knife as versatile as the steel itself. With a nicely polished, hand-sanded finish below the marks of the hand-forging process, the blade is paired beautifully to a long, tapering handle carved from a lightweight, textured, black resin-based composite with pine dowel and patinated copper retention bolt cap at the end.
