Ocean Wave Tuna Sword 363mm
From the fisherman knifemaker and tuna master himself, bladesmith Greg Cimms has created an extraordinary, one-of-a-kind tuna sword with gorgeous ocean wave-like hamon line along the high-polished W2 blade’s silky bevels. Measuring 363mm / 14.3" long, the edge is thin, strong, and razor sharp from tip to heel beneath wonderfully shaped convex bevels, providing geometry that translates to outstanding cutting performance, whether used for breaking down whole tuna, or for precision slices of wagyu, as the case may be. The aquatic aesthetic and superb craftsmanship of the purpose-built blade is of course matched by Greg's handle build. Robust and sculpted to be exceedingly comfortable for long and demanding cuts of dense proteins, custom blue, black, and grey G-carta by G.L. Hansen & Sons is paired with carbon fiber, then wrapped around a frame of white G10, and secured with four oversized, polished, flush pins. A blade to make any chef's heart skip a beat.

A former fine-dining chef of ten years. Greg Cimms of GC Knives began his knifemaking journey in pursuit of crafting the world's finest chef knives, driven by a desire to create exemplary versions of the tools he most enjoyed using during his time in the kitchen. Greg's laser-like focus and uncompromising standards for quality and performance lead to stunning, one-of-a-kind culinary tools, each of which is a piece of art made to pass down through generations of cooks. With a studio in New York's Hudson Valley, every elements of each knife is made by hand by Greg himself.
