In new and unused condition this exquisite tool enjoys the absolutely superb geometry and balance expected of this top, New York-based bladesmith, with thin, hard edge, tall, convex bevels, and fine tip. Dressed in curly Hawaiian Mango wood with bog oak, sterling silver, and gorgeous mammoth tooth elements, the handle is comfortable and elegant, shaped to a classic octagonal wa-style profile. As with each of Greg's culinary creations, no detail is overlooked, and no stone left unturned.

The Story

A former fine-dining chef of ten years. Greg Cimms of GC Knives began his knifemaking journey in pursuit of crafting the world's finest chef knives, driven by a desire to create exemplary versions of the tools he most enjoyed using during his time in the kitchen. Greg's laser-like focus and uncompromising standards for quality and performance lead to stunning, one-of-a-kind culinary tools, each of which is a piece of art made to pass down through generations of cooks. With a studio in New York's Hudson Valley, every elements of each knife is made by hand by Greg himself.
