10th Anniversary Rustic Personal Chef
The final chef knife collaboration to commemorate our 10th anniversary is based on a longstanding, well-loved, but rarely seen profile by bladesmith Don Carlos Andrade, the Rustic Personal Chef. Limited to only four total knives, each is hand forged by Don at his California studio from 1075 carbon steel, the style alloy relied upon by culinary knife makers for centuries, slightly lower in carbon than some modern steels, and prized for its toughness and durability, especially in the context of large, hard-use tools. And this 225mm / 8.9" build is just that, benefitting from the material’s resiliency that makes it not only long-lasting, but also makes maintenance and sharpening a breeze. With a foggy, hand-sanded, and etched finish across the differentially heat-treated blade, you will find Don's usual superb convex bevel geometry from heel to tip, strong and robust in the rear for demanding work, and slimming toward the pointed, aggressive tip that makes easy work of detail cuts, as well as long and/or precision slices in tandem with the edge profile’s nicely curved belly. Balancing just in front of the handle, the knife is full and quite satisfying in the hand, a quality we've come to expect from this formally trained chef-turned-knifemaker. For the hand to hug, made exclusively for Eatingtools' 10th birthday, per our creative direction by the team at G.L. Hansen & Sons, is an exquisite piece of rag and rope G-carta, sculpted in Don's comfortable shield-style wa handle rendition, completed with a vintage burgundy micarta inlay and matching ferrule plus a single, flush silicon bronze pin. A custom, cloth-covered saya is included with each knife.

Working from his small shop in Southern California, Don Carlos Andrade designs and creates heirloom quality chef knives by hand, each with a unique and inviting look and feel that stands out from the crowd. A trained chef and long-time artist with a background in stone sculpting and blacksmithing, Don's attention to detail as well as his knowledge of the subtleties involved in working with kitchen tools day in and day out result in extraordinary, custom chef knives that will last generations of daily use.
