The hand-filling handle, sculpted from maple and micarta, offers excellent control over a stiff, strong blade that provides ample strength, both laterally and above the razor-sharp edge, for all variety of prep work on the cutting board, and even some peeling jobs in the hand. Clad in reclaimed wagon wheel wrought iron, the 100mm / 3.9" blade's core is 1084 carbon steel.
