K&T Paring Knife - Two
Slightly larger than the first paring knife from Bryan, the three-layer san mai blade on this piece measures 3.625" and makes an outstanding hard-use tool in the kitchen with an edge hardened to 63/64 HRC. The iron used in the outside layers of the blade, known as the 'jacket,' was salvaged from a French Cathedral and is upwards of 300 years old. Produced by Raquin's colleague in Germany, the 154sc high carbon steel used for the edge is of superb quality and the limited amount made available is already off the market. The contoured vintage micarta handle show beautiful 'grain' and is comfortable and easy to manipulate in the hand.

The Story
Bryan Raquin forges all of his blades by hand in this shop in the Auvergne region of France; a 280 year old wood barn encloses his workspace and only hand tools are used. The gas forge used was made by Bryan as well, and sharpening and honing of blades is performed using traditional Japanese polishing stones. Look for more extraordinary pieces by Bryan Raquin.
