Hand forged in Berlin, our first offering by bladesmith Oliver Märtens of oel handmade knives is a purposefully designed, balanced, and beautiful santoku chef's knife in 1.2067 carbon steel. Very thin and very sharp, the Japanese-style edge profile lends itself to fast, efficient, and rewarding push / pull cuts, with a needle-like tip for detail work and precision. At 57mm tall, the blade is versatile and handy in any grip, for any and all meal prep applications. Sculpted in Oliver's recognizable form, the handle of natural linen micarta is comfortable and just the right length, faceted and rounded, and capped with an elegant brass ferrule. Crafting purposefully designed, hand-forged chef's knives at his Berlin studio, German bladesmith Oliver Märtens builds function-first cutlery with simple, elegant lines and unabashed utility. A long-time tool mechanic with nearly a decade of metalworking experience, his culinary knives offer thin, razor-sharp blades, Japanese edge profiles, and unique, elegant, comfortable handles.
