Emerald Sujihiki 245mm

Green-dyed masur birch wood is capped with solid copper and dark tempered hardware to form the removeable torpedo-style handle of the newest sujihiki from Austrian bladesmith Benjamin Kamon. At 245mm / 9.6" long, the hand-forged blade of Benjamin's preferred 1.2519 carbon steel features tall bevels, convex 'Walkschliff' geometry, a very hard, sharp edge, and a distal taper to a fine tip. Contrasting the mostly-smooth, polished blade are a handful of hammer marks, telling the story of the knife's making. Long, but not too long, a beautiful blade with a touch of lateral flexibility for slicing and carving in the kitchen, or at the dining room table.

The Story

Austrian bladesmith Benjamin Kamon of Kamon Knives has surrounded himself with edged tools for most of his life. When he began cooking as a teenager, blades and their various usage techniques provided intrigue and Ben became quite proficient. The rest, as they say, is history. Employing clean, high-hardenable carbon steels, fully water-cooled grinding for optimal grain structure, and recognizable, removable handles, Benjamin's work is of the highest caliber, while maintaining a unique and imaginative approach to his craft throughout.
