With 375mm / 14.7” of hand forged, razor-sharp edge, this sujihiki by Austrian bladesmith Benjamin Kamon is at the ready for your every slicing need no matter how large. Beautifully shaped and tapering steadily from handle to tip to offer excellent balance as well as a touch of lateral flexibility in the top half, the blade in 1.2519 carbon steel receives convex bevels and Benjamin's denty finish. The handle is sculpted from wonderfully figured, stabilized curly birch wood in Benjamin's faceted, Eastern-style profile, and finished with removeable, solid bronze end caps.

The Story
Austrian bladesmith Benjamin Kamon of Kamon Knives has surrounded himself with edged tools for most of his life. When he began cooking as a teenager, blades and their various usage techniques provided intrigue and Ben became quite proficient. The rest, as they say, is history. Employing clean, high-hardenable carbon steels, fully water-cooled grinding for optimal grain structure, and recognizable, removable handles, Benjamin's work is of the highest caliber, while maintaining a unique and imaginative approach to his craft throughout.
