Another Niko Nicolaides chef knife that we wouldn't mind cooking with day in and day out, while gazing at its gorgeous looks with every cut. The 190mm / 7.5" blade stands 48mm tall at the heel, the 52100 carbon steel edge rocking beautifully on the board, and the house-made damascus highlighting the blade's elegant form. Forged by hand at Niko's Detroit studio, the blade is nicely balanced in every sense: convex bevels and a sturdy build provide strength and feel of stability for tougher cuts and ingredients, while a full-distal taper to a fine tip provides versatility and a subtle touch of lateral flexibility, all in a size large enough for busy kitchens and small enough to do it all even in tight quarters. Stretching the damascus's pattern from a seemingly disordered mix of twists and turns into parallel lines of light and dark, the handle's integral bolster seems to tug at the blade's steel before transitioning through rings of G10 and finally to a gorgeous, sculpted piece of redwood burl that fills the hand for grips of any kind.

The Story

At his one-man studio in Detroit, Michigan, Niko Nicolaides creates custom chef knives with a focus on unique, house-made damascus pattern steel and hand-forged blades. A self-taught, full-time bladesmith, Niko worked previously as a CNC programmer and operator before leaving to hone his skills on the decidedly analog, artisan end of the object-production spectrum. A desire to make great looking, superbly functioning culinary tools that will last a lifetime is why he does it.
