In hand-forged 52100 carbon steel, the 220mm / 8.7" blade features a full distal taper with stiff, sturdy spine, compound 'S-grind' bevel geometry, forge-finished flats, and a thin, very sharp edge beneath a convex section with wonderful balance for all manner of daily meal prep. A skilled and experienced metal-artist with a wide variety of work in his repertoire, Saul's handmade chef knives leave a unique and lasting impression on anyone who crosses them; technically outstanding, classic in form, yet always uncommon in style at the same time. Outstanding execution of each element is a given, from the house-made copper & brass mokume gane sculpted into a decorative, heirloom-fit bolster that adds as much comfort to the pinch-grip as it does beauty to the handle, to the octagonal buffalo horn behind it, tapered back-to-frond and fitting the knife just perfectly, aesthetically and functionally. A culinary tool in size, weight and profile that deserves to be used every day, and passed down through the generations.
