A workhorse for your kitchen from Mr. Bryan Raquin. With a lighter forge-finish that many of Bryan's blades, having removed most decarburization from the flats after forging, the low shinogi gives way to kasumi-finished bevels and razor sharp, stone-polished edge. Relatively lightweight at 6.5 oz / 186 g the knife balances about an inch in front of the handle helping to give it a quick and nimble feel while providing ample strength for every cut. Bryan's usual locally-sourced burnt oak handle is octagonal, comfortable, and finished with a wonderful texture.
