Koa San Mai Chef 198mm

Bladesmith Joshua White of New Jersey delivers an elegant and classic one-of-a-kind chef knife with a presence that balances simple, utilitarian sophistication with the head-turning visuals of a three alloy, damascus-clad blade. First, 1085 & 15n20 carbon steels are pattern-welded and forged into a meandering field of twists and turns, forming the outer layers of the san mai (three layer) blade. Between them, sharpened at the edge and visible down the center of the spine, is a hard, darkly etched bar of 1095 carbon steel forming the core. Balanced just in front of the blade heel, where the wide, solid spine measures 6mm across, the mid-size chef's knife, 198mm / 7.8mm at the edge and 48mm tall at the heel, delivers a strong, sturdy profile, aggressive tip, and thin, sharp edge to the cutting board. Dressed in a beautiful piece of Hawaiian Koa, the handle is gently sculpted and fills the hand, fitted with a spacer of black G10, adding to the knife's overall aesthetic that merges an overall Western style with elements that speak to the Eastern influence of a hidden-tang, relatively straight-edged culinary tool.
