Bog Oak Damascus Chef 240mm
A beautifully styled, powerful, hand-filling workhorse for the kitchen forged from house-made carbon damascus steel by bladesmith Charlie Ellis of Eagle Crest Forge. At 240mm / 9.45" long and 59mm tall, Charlie delivers a volume of steel to the cutting board equally capable of brute strength cuts and precision slices alike, a 5+ millimeter wide, faceted spine contributing to the knife's substantial 12.6 oz / 356g weight, while pronounced 'S-grind' bevel geometry and a thin, razor-sharp, convex edge contribute to performance, balance, and an unforeseen feeling of finesse. Styled to match the blade's forge-finish and bold lines is a large, subtly tapered octagonal handle of bog oak fitted with a stepped-down, heirloom fit bolster of wrought iron that is capped by molten copper, the handle finished with a polished bronze retention nut at the back. A custom, velvet-lined saya is included.

The Story
A long-time blacksmith and bladesmith, Charlie Ellis crafts one-of-a-kind chef knives at his North Carolina workshop. Drawn to making kitchen cutlery originally by the need in his own kitchen for reliable, high-quality blades, the knives Charlie produced quickly advanced beyond objects of his own use, and soon become objects of art and precision for others to enjoy. Function-first designs with integral bolsters, compound bevel geometry, sculpted handles, and unique materials and blade finishes, are noteworthy elements of many of the kitchen tools in our collection handmade by Charlie.
