Light, thin, and nothing short of mesmerizing with its unusual and innovative four-bar mosaic of twisted radial W's pattern damascus set inside solid 1095 carbon steel, this laser of a chef knife from Joseph Schrum is bound for greatness. Joe, designer and craftsman behind Halcyon Forge, has given the long, relatively straight blade with 248mm / 9.8' edge wonderfully honed, compound 'S-grind' bevel geometry above the very thin, very sharp edge, further contributing to the knife's light, 6.6 oz / 188g weight, and offering excellent cutting performance for long, precise slices, or up-down chopping that can easily take advantage of the slight curve in edge profile to rock on the board. The blade spine, curved and displaying its own perspective on the damascus it's forged from, slims to an incredibly slim, pointed, and low tip, perfect for detail work. Finally, enjoy excellent comfort and control with a long, oval handle sculpted from a dark piece of African Blackwood with beautiful grain, capped with a bolster of carbon fiber and alternating rings of black G10 and polished nickel.

The Story

From St. Louis, Missouri, owner Joe Schrum of Halcyon Forge has built a loyal and passionate following for his outstanding chef knives, each hand-forged at the small shop he runs a few hours from his hometown. Focusing on recycled and locally sourced materials, each knife Joe creates is built for function and versatility, employing simple, traditional techniques in order to realize the best properties of each piece of steel or handle material, while producing beautiful, heirloom quality tools at the same time.
