Burlap Honyaki Chef 234mm
The handcrafted prototype of a new full-tang chef knife design from New York bladesmith Greg Cimms, this gorgeous build features a high-polished blade of W2 carbon steel with differentially heat-treated honyaki finish. With a workhorse feel in the hand, the blade tapers forward to a very fine tip, and slices with a thin, razor-sharp edge that sits below pronounced convex bevels, providing the strength and versatility for demanding and tough work as well as precise and delicate cuts. For comfort and control, a handle sculpted from black burlap micarta atop liners of 'toxic green' G10 is secured with a pair of stainless pins and a single, unique mosaic pin at the center.

A former fine-dining chef of ten years. Greg Cimms of GC Knives began his knifemaking journey in pursuit of crafting the world's finest chef knives, driven by a desire to create exemplary versions of the tools he most enjoyed using during his time in the kitchen. Greg's laser-like focus and uncompromising standards for quality and performance lead to stunning, one-of-a-kind culinary tools, each of which is a piece of art made to pass down through generations of cooks. With a studio in New York's Hudson Valley, every elements of each knife is made by hand by Greg himself.
