Walnut San Mai Gyuto 280mm

At 280mm this Japanese inspired gyuto, hand made by Bryan Raquin of La Bosse, France, is a cutting machine. The walnut used for the handle was salvaged from furniture of Bryan's great-grandmother. The san mai steel, welded by Bryan and formed into the blade you see here by hand, consists of XC10 carbon steel jackets (outer layers) and 145sc 'super clear' steel, containing 1.45% carbon, at the edge. Balanced and beautiful through and through this one-off chef knife's understated elegance is sure to have you yearning for more of Bryan Raquin's work.

The Story

A blacksmith forging steel and designing knives with functionality core to his mission, Bryan Raquin works out of his small shop in central France fabricating each element of every knife himself. Influenced by Japanese cutlery Bryan creates his own 3-layer san mai steel and applies the final cutting edge to each blade by hand on a series of Japanese wet stones using traditional methodology. A photographer, artist and wonderful person, we're proud to represent Bryan's work on Eatingtools.
