In bladesmith Steve Pellegrino's Euro Chef profile that we know and love, this new build features a handy and versatile stainless steel blade with 209mm / 8.2" of thin, hard, hair-popping sharp edge. A silky, hand-sanded stain finish is contrasted with lightly textured flats below the rounded, polished spine, with distal taper in the final inches to an extremely thin, needle-like tip, and rounded, polished choil in the back for welcomed comfort in the pinch grip. A short, nicely rounded Western-style handle further lends itself to using this knife in pinch grip, and for smaller hands, comfort is enjoyed in any grip. An outstanding tool for daily meal prep in home or working kitchens alike, the upswept edge profile and 60mm tall heel will chop for days, your fingers wrapped around a handle sculpted from beautiful maple burl atop liners of pale white G10 and secured with a pair of polished, stainless pins.

The Story

The son of a woodworker and grandson of a sheet metal tradesman, bladesmith Steve Pellegrino has been creating with his hands since an early age. Whether experimenting in his father's basement woodshop, or launching homemade rockets (including one which reached 37,000 feet and a velocity of 1,688mph!), Steve's creative, engineering mind pushes boundaries, earned him a degree from the School of Visual Arts in NYC, and results in chef knives that are built for utility and performance. Steve's edges are thin and sharp, his balance natural and comfortable, his handles slim and efficient, and his fit-and-finish clean and crisp.
