The matching vegetable slayer to Leszek Sikon's new Beech Damascus Gyuto 215mm, this striking nakiri is tall, slim, and wonderfully weighted to move through ingredients with ease. Standing 61mm at the heel with a hard, razor-sharp edge beneath subtly convex bevels, the hand-forged blade of 50-layer damascus with a 'Spicy White' 26c3 carbon steel edge is balanced and powerful in the hand and very thin at the edge. In Leszek's recognizable, hand-hewn integral bolster construction with rough, rustic aesthetic that gives each knife a personality of its own, this piece of culinary art is comfortable and nicely weighted for control on the cutting board. Meeting a bolster that combines views of the house-made damascus, hammer marks telling the story of its handmade origins, and facets on all sides, is a piece of naturally beautiful beech wood sculpted in the same octagonal form.

The Story

Originally from Poland, bladesmith and metal artist Leszek Sikon has focused his talents on cutlery for the kitchen for the better part of a decade, earning awards from the Craft Council Hothouse to the honor of QEST Scholar from the Queen Elizabeth Scholarship Trust. Living and working in Suffolk, England where he crafts sole-authorship chef knives for home and professional chefs alike, Leszek teaches knifemaking classes when not forging house-made damascus steels, go-mai chef blades, and other functional art for the kitchen.
