The companion knife to Jim Dobbler's Wabi Sabi Chef Knife, this handy and attractive paring knife will see no shortage of action in kitchens large or small. A hard, sharp, thin edge of AEB-L high-performance stainless steel is strong and versatile, offering ample steel for demanding cuts in small spaces, and enough finesse for precision work on the cutting board or handheld work above it. Crafted at Jim's Massachusetts workshop, the belt-finished hollow-ground bevels are contrasted by dark, forge-finished flats that show the hammer marks of the knife's handmade origins. Handled with classic, dark desert ironwood accented with faux ivory and a patinated brass ferule, the knife is comfortable and beautifully finished.

The Story

Growing up in the US Midwest surrounded by objects and art from his parent's time in Okinawa, Japan, artisan Jim Dobbler later spent nearly two decades living out west exploring the Sierra Nevadas and Rocky Mountains, drawing inspiration from nature and eventually develop a rustic approach to his craft.. A self-taught maker, now specializing in a variety of disciplines, from 2D and 3D design, to the bladesmithing of chef knives, the carving and hammering of chopsticks, and more, Jim discovered knifemaking originally and has since progressed to forge, shape, and sculpt objects for the kitchen, working chef, and beyond.
