Blue & Bronze Chef 203mm
From the talented hands of Charlie Ellis comes a kitchen workhorse chef’s knife in satin-finished stainless steel with a nicely styled, all-business handle of blue G10 over black and turquoise G10 liners and bronze pins. Sculpted to ergonomically fill the handle for comfort and control, the handle is paired to the rounded blade choil and three-face faceted blade spine that together suit a variety of grips and hand sizes. At the front end of the knife, Charlie has given a 203mm / 8" blade in high-performance AEB-L stainless steel tall, convex bevels that come together at a thin, razor-sharp edge in an aggressive, Western-style profile that stands 62mm tall at the heel. Stiff and strong in the back, the blade slims as you move forward, culminating at a very fine, needle-like tip ideal for detail work and precision slices. A touch of lateral flexibility is enjoyed in the final inches as well.

The Story
A long-time blacksmith and bladesmith, Charlie Ellis crafts one-of-a-kind chef knives at his North Carolina workshop. Drawn to making kitchen cutlery originally by the need in his own kitchen for reliable, high-quality blades, the knives Charlie produced quickly advanced beyond objects of his own use, and soon become objects of art and precision for others to enjoy. Function-first designs with integral bolsters, compound bevel geometry, sculpted handles, and unique materials and blade finishes, are noteworthy elements of many of the kitchen tools in our collection handmade by Charlie.
