Sharped from high-performance AEB-L stainless steel, the 258mm / 10.2" blade delivers a tall, sharp, and aggressive profile to the cutting board, with silky hand-sanded satin finish and harpoon-style spine that slims to a needle-like tip. Built for even the most demanding cuts, Charlie finds outstanding balance and provides versatility with convex bevels that are thin just above the edge for buttery-smooth cuts while maintaining just the right toughness for anything the kitchen can throw at it. The Story
A long-time blacksmith and bladesmith, Charlie Ellis crafts one-of-a-kind chef knives at his North Carolina workshop. Drawn to making kitchen cutlery originally by the need in his own kitchen for reliable, high-quality blades, the knives Charlie produced quickly advanced beyond objects of his own use, and soon become objects of art and precision for others to enjoy. Function-first designs with integral bolsters, compound bevel geometry, sculpted handles, and unique materials and blade finishes, are noteworthy elements of many of the kitchen tools in our collection handmade by Charlie.
