White Aramith Gyuto 240mm
Dressed in polished white Aramith-produced phenolic resin, the same material and manufacturer of the world's most acclaimed billiard balls, this is the latest one-of-a-kind chef knife handmade in Austria by bladesmith Benjamin Kamon. Benjamin's hybrid shield-style wa handle rendition begins in the front with four distinct faces including two flat side facets, transitioning steadily to a rounded triangular shape at the rear, comfortable and natural in the hand, the Aramith capped by titanium end caps in his concave, "oil-slick" patinated finish. The handle is removeable via a retention bolt. At the business end of this stunning tool Benjamin has forged 1.2519 carbon steel into a 240mm / 9.4" workhorse blade with relatively short, convex primary bevels that retain strength and rigidity toward the heel for the more demanding work while slimming toward a needle-like tip for precision slices and delicate cuts. Balance, both in the hand, and functionally in every sense of the word, is what Benjamin's work exemplifies, and this knife is a wonderful example. A custom saya is included.

The Story
Austrian bladesmith Benjamin Kamon of Kamon Knives has surrounded himself with edged tools for most of his life. When he began cooking as a teenager, blades and their various usage techniques provided intrigue and Ben became quite proficient. The rest, as they say, is history. Employing clean, high-hardenable carbon steels, fully water-cooled grinding for optimal grain structure, and recognizable, removable handles, Benjamin's work is of the highest caliber, while maintaining a unique and imaginative approach to his craft throughout.
