Sourced locally, a beautiful piece of live oak is darkened and protected through carbonization and paired to a blade forged by hand from a reclaimed carbon steel file by chef, bladesmith, and Brooklyn artisan Will Griffin. With the file's pattern left intact across the 180mm / 7.1" blade's flats, the cutting edge below is all business, hard, thin, and razor-sharp by way of Will's whetstone collection, designed for all manner of daily meal prep. Sweeping upward towards the very slim, needle-like tip, the edge rocks nicely on the board, poised to both chop and slice with efficiency and precision. The handle is comfortable and fitting of a chef-designed-and-made knife with its traditional octagonal wa handle form and wonderful attention to detail. A handmade leather saya is included.

The Story

A talented bladesmith and artist, Will Griffin of W.A. Griffin Bladeworks builds custom chef knives & culinary tools in Red Hook, Brooklyn, inspired by a decade cooking professionally in NYC. Forging by hand, Will's focus lies squarely on the use of trusted steels, traditional techniques and simple, purpose-driven designs to create function-first knives and culinary tools including table knives and strops.
