From our newest chef knife artist, Dan Bidinger, comes a full size, 237mm / 9.3" daily prep tool in satin-finished, high-performance AEB-L stainless steel that is as comfortable and rewarding to hold and use as it is to marvel at. Like so many of our artisans, Dan finds that undeniable mix of form and function, in this knife for example by providing superb performance and food release through precisely shaped symmetrical, compound 'B-grind' bevel geometry that, with his fine, hand-sanded finish, is every bit as beautiful as it is functional. Combined with rounded and high-polished spine and choil, the balanced, tapering blade with 55mm tall heel and needle-like tip is poised to do it all on the cutting board. For comfort and control Dan has fashioned a handle from natural linen micarta and blue G10, sculpted around the tapering blade tang into a grip that delivers outstanding utility in the hammer and pinch grips alike. Lightweight, quick, and nimble in the hand, this is a knife to reach for day in and day out.

The Story

Admired by fellow culinary knifemakers for his clean designs, utilitarian profiles, refined geometry, and outstanding fit and finish, Sequim, Washington artisan Dan Bidinger crafts one-of-a-kind chef knives for the home and professional chef. A self-taught knifemaker over the past half a decade, Dan has immersed himself in the artisan community to learn the nuances of what makes a high-performance tool for the kitchen, developing his own design style and crafting sleek, purpose-built knives from a variety of steels. An emphasis on precision bevel geometry and compound grinds has gained Dan a following by chefs who prefer a Western-style blade with aggressive tips, long, thin edges, and laser-like cutting styles.
