In classic Benjamin Kamon style, with every detail accounted for, each transition smooth and precise, and every millimeter of the edge crisp and sharp, the Bronze Ash Cleaver is our latest offering from this talented Austrian bladesmith. The 1.2519 carbon steel blade is forged tall and robust, thick and weighted along a rounded, polished, tapering spine that lends power and heft to help the thin, hair-popping edge move effortlessly through ingredients. Designed primarily for vegetable, the 200mm / 7.8" edge sits beneath short, convex, and dynamic bevels, slightly thicker toward the heal than the front of the blade, making this a versatile, daily-use tool for a wide variety of cuts. Complementing the two-tone blade with belt-finished bevels and forge-finished flats is a gorgeous and comfortable handle sculpted from dyed and stabilized curly ash with weathered bronze end caps.

The Story

Austrian bladesmith Benjamin Kamon of Kamon Knives has surrounded himself with edged tools for most of his life. When he began cooking as a teenager, blades and their various usage techniques provided intrigue and Ben became quite proficient. The rest, as they say, is history. Employing clean, high-hardenable carbon steels, fully water-cooled grinding for optimal grain structure, and recognizable, removable handles, Benjamin's work is of the highest caliber, while maintaining a unique and imaginative approach to his craft throughout.
