A full-size kitchen workhorse in tough, durable A2 carbon steel handcrafted by Dan Bidinger is your tool to make every cut in the kitchen with uncompromising efficiency and versatility. At 230mm / 9.1" long with a full distal taper along the rounded spine, the blade's bevels are nicely convex from heel to tip above a sharp, near-zero edge. Strong and sturdy in the back where the edge profile is flat for demanding chopping work and large ingredients, it gently transitions towards to a slim and aggressively pointed tip for detail cuts and slicing work in tandem with the upswept belly portion of the forward edge. The blade’s polished, forced-patina finish is not only beautiful but helps the knife move through foods effortlessly. Sculpted into a Western profile with a combination of facets and rounded faces, elegant lines and comfort in the hand define the handle of micarta with three bronze pins.
