A 200mm sujihiki, this one set apart from other recent knives by Bryan with a W2 carbon steel edge, hammer texturing, and bolstered Japanese magnolia wood handle with laminated wood ferrule. Nicely balanced and light at 112g (3.9oz), the thin blade tapers to just 1.9mm one inch from the tip. At 3.2mm wide and 33mm tall at the heel, this a perfect sujihiki blade for small and medium size fish and other proteins. But trust us, you'll want to use it for everything.
