Oak Gyuto 290mm

Another beauty from Bryan Raquin in his house-made san mai, measuring 290mm from the front of the handle to the tip, with 275mm of whetstone sharpened edge, hardened to 63-64 HRC. Clad with XC10, the blade's core is "super clean" 145sc carbon steel for the edge, containing 1.45% carbon and virtually no other additives. The hand-carved handle is made from locally sourced oak, and a wooden saya made by Bryan is included.

The Story

Bryan hand forges every blade at his one-man shop in the Auvergne region of France where he designs and builds highly functional no-frills custom knives for daily use. This 290mm Oak Gyuto is perfect as a do-it-all, full-size blade for the professional or home kitchen.
