Antique Micarta Shallot Knife

Originally designed per the request of a chef and long time friend of Don Carlos Andrade for use in shallot preparation, the Shallot Knife clearly has a far broader repertoire of utility. It's 5.75" (146mm) edge, balanced beautifully in front of the raised handle design, provides ample cutting ability in both power and precision to handle any number of daily tasks. Differentially heat treated, etched, and polished, the 1095 carbon steel blade has been precision forged using only hand-held hammers, and is refreshingly lightweight and controlled with ease. The handle features antique ivory micarta with detail carvings, a rare blue Westinghouse ivorite micarta inlay and preened brass pins. A cloth covered transport case is included.

The Story

A chef knife with purpose, the Shallot Knife was designed in Don Carlos Andrade's Los Osos, California workshop and built with the superb attention to detail and subtle design elements we've come to expect from Don's work. His ability to carve, forge, heat treat and bring together in an undeniably beautiful package is driven by Don's years of experience in fine dining kitchens, his time carving stone and bronze and his more than a decade of forging and shaping blades by hand. The Shallot Knife is a stunning example of his abilities.
