Bryan's hand-rubbed petrichor' blade finish, or kasumi as it is known, and a stained and nicely detailed linden wood saya are just the icing on the cake. A beautiful blade in every respect, forged from san mai composed of Raquin's preferred steels, 145sc for the core and XC10 for the outer jackets, this is an exemplory gyuto from France. At 265mm (10.4") long and standing 50mm (1.97") tall at the heel, the large blade balances about 25mm in front of the choil while the long 150mm (5.9") burnt oak handle creates an overall symetry that makes this knife a pleasure to work with, not to mention easy on the eyes.

The Story

Bryan Raquin never ceases to impress us with his unmistakablly simple and classic designs and focus on blade performance through the use of clean high-carbon steels and a water quenching process which he refines constantly. Forging at his shop in Central france, Bryan has developed a cult following of his custom chef knives and we are proud to represent him and his work.
