Ironwood Santoku 90mm

Quenched with clay after three normalization cycles and then tempered, Don Nguyen is able to produce a very nice hamon in this high-performance W2 carbon steel blade. An edge of just over 90mm long and blade height of 35mm tall at the heel, with a balance point just behind the front of the handle, a fantastic and versatile knife for detail work and small chopping tasks. A very fun tool in the kitchen. Ironwood and black paper micarta for the handle give this small chef knife a big personality, the handle tapering from a hand-filling 28mm at the back to 21mm as it meets the blade.

The Story

Don Nguyen creates handcrafted kitchen knives at his one-man shop in the US state of Arizona. Having recently completed an engineering degree at the University of Arizona, Don has "an obsession with shapes and steel" and we couldn't be happier that the obsession manifests itself in the form of tools for chefs. Superb fit and finish, unique yet highly functional designs and a focus on blade performance are hallmarks of Don's work.
