The Florentine Three, available here in five configurations, is just that. A beautifully balanced knife that loves a pinch-grip with an aggressive and agile profile and the Florentine handles we've come to love.

High performance steel options include Sandvik 14C28N stainless, 52100 carbon and a custom 52100 / 410 stainless blend made just for the Florentine Three Folded Steel version, also called san mai steel.

The Story

After the successful launches of his Hometown Collection in 2015 and the Florentine Two lineup in 2016, Florentine Kitchen Knives and designer Tomer Botner move in a new, yet old direction, taking cues from Tomer's first knife design, the Florentine One, with dozens of subtle upgrades to both design and materials. Produced in small batches and hand finished and assembled in Portugal and Spain, Tomer continues to release outstanding kitchen knives aimed at both professional and amateur chefs at a price point that doesn't break the bank.

Last week I received a stainless steel mixed handle Florentine Three chef's knife as a birthday gift from my family. I was a line cook for some time, I collect both pocket and kitchen knives, and I continue to cook every single night for my wife and I. I wouldn't say I'm an expert by any means, however I know a quality knife when I get my hands on one.

Let me tell you guys, this knife is as functional as it is beautiful. The grind is amazing - it's so thin behind the edge, and OOTB it was scary sharp. It's a tall knife which took a few days to get used to as my last daily driver was a Japanese gyuto, but now that I've made a few meals this thing is an extension of my hand - rock chopping in particular is a pleasure.

The fit and finish on this knife is what you would expect from a $300+ dollar knife, which is to say it's outstanding. I have no doubts that I will cherish this knife for the rest of my life. Thank you eating tools for bringing this knife to the States!!!
