The 145sc carbon steel core blade clad with XC10 mild steel jackets and water quenched for optimal grain structure makes this smaller gyuto, with its beautifully curved edge, a workhorse in the kitchen, ready to tackle the toughest tasks for hours on end. The edge, thin and hard at approximately HRC 63, will cut and cut and cut some more, holding an edge between sharpenings and taking an edge easily. Perfect for throwing in your knife roll, Bryan's 'Restaurant Finish' puts the focus squarely on edge geometry and performance and boasts a simple, raw forge finish on the blade flats, machine-finished bevels and a hand carved wa-style burnt oak handle.

Bryan Raquin's work continues to reach new heights, his focus on water quenching high-quality, clean steels such as the extremely rare 145sc, and it's amazing to watch the caliber of blades he now produces in his one-man shop in central France. This 190mm gyuto is no exception, with a blade profile as versatile and task-oriented as it is beautiful, nicely balanced and light in the hand at just 4.4 ounces.
