Burnt Oak Nakiri 185mm X 70mm

At 70mm tall and hair-popping thin behind the razor edge, this cleaver-like nakiri is primed to add a new level of excitement to the kitchen. In capable hands there is very little it cannot do, whether the task be large or small. The san mai blade is forged by Bryan Raquin using 'super clean' 145sc carbon steel for the edge and mild XC10 for the jackets, then water quenched for outstanding edge performance. A slight convex geometry provides great food release. Hardened to approximately HRC 63 the 185mm of edge will hold an edge with the best of them. The wa style handle is carved from oak sourced near Bryan's home and then burnt for longevity...and good looks.

Bryan Raquin creates high-performance cutting tools at his one-man shop in central France with a focus on edge geometry and optimal grain structure in his forged carbon steel san mai blades. This unique and beautiful nakir will impress the most discerning chef, a true testament to Bryan's ability to work outside the box, applying the same capabilities found in his more common blade shapes to this incredible knife.
