Weighted for effortless slicing over long shifts in the kitchen, the beautiful distal taper and convex grind bring the blade from a 4.7mm width at the back of the spine to a thin, sharp edge that keeps you coming back for more. Balanced just in front of the choil, which like the spine is rounded and polished, this blade is ideal for daily use from breakfast to dinner and back again.

The Story

Don Nguyen, an engineer by training, has focused his eye for design and detail of functional objects exclusively on chef knives, and it's fair to say he has an extremely bright future as he continues to win over chefs, both amateur and professional, with his work. This western gyuto with it's hand-rubbed carbon steel blade and beautiful cocobolo handle shaped in Don's recognizable style represent the marriage of form and function that drew us to his work from his first experiments in creating kitchen blades.
