Hand forged in Takefu White #2 with 22-layer carbon steel cladding, Jelle Hazenberg creates a knife for chefs like himself, his inspiration coming from years of work in commercial kitchens, his designs unique and recognizable. At 195mm this HRC 62-63 blade has a hard, thin and balanced edge and upswept tip with an aggressive profile and tip, excellent for a variety of daily cutting tasks. The African Blackwood and stabilized poplar burl handle fits the hand like a glove, wide and gently contoured at the front making for a comfortable, hand-filling pinch grip that offers noticeable control. A leather saya handmade by Jelle is included.

The Story

From the Neitherlands and currently working in Ireland, Jelle hand forges custom chef knives that are made to be used daily, and they do it in style. The countless hours spent processing large amounts of vegetables in commercial kitchens led him to pursue knifemaking, striving to improve on the tools available to him currently. Focusing on Japanese powder steels and using san mai construction for flexible, comfortable cuts with a hard edge that stays sharp.
