Quenched in water and put through three normalization cycles, Jelle's Hazenberg's blades are hand forged for optimal geometry and edge performance at a hardness of 62-63 HRC. Dressed in African Blackwood with a contrasting ivory micarta spacer, this medium chef has a thin, razor-sharp edge measuring 175mm / 6.89" with a curved edge and aggressive tip. The contoured handle is as beautiful as it is comfortable and the knife balances at the choil and weighs in at a light 5.1 ounces (144 grams). Another beauty from Jelle.

The Story

Forging one-of-a-kind custom chef knives at his small shop in Ireland, Jelle Hazenberg, originally from The Netherlands, has an eye for beauty and the mind of a chef. Working by day in a commercial kitchen, Jelle began making knives to fill a void he say when attempting to find the perfect knife for his own work. As is evident in each piece he creates, his wares are not only utilitarian and made for daily use, but objects of desire that inspire awe in his many followers.
