Honyaki Sujihiki White No.2 240mm

Hand-forged from Hitachi White No.2 carbon steel, the 240mm blade is water quenched, the gorgeous profile then hand polished, testament to Jelle Hazenberg's eye for both form, and function. Hardened to HRC 63-64 the blade will hold a wonderful, thin, sharp edge and slice for days. The handle, carved in Jelle's signature style, is made of maple with a beech wood spacer. A hand-stitched leather saya is included.

The Story

Forging one-of-a-kind custom chef knives at his small shop in Ireland, Jelle Hazenberg, originally from The Netherlands, has an eye for beauty, and the mind of a chef. Working by day in a commercial kitchen, Jelle began making knives to fill a void he saw when attempting to find the perfect knife for his own work.
