A full size chef knife hand forged by Jelle Hazenberg at 205mm with a gently curved blade for effortless rocking and a distal taper to impress. The spine elegantly thins in width from 3.3mm at the heel to 2.5mm halfway down the blade, to 0.95mm one inch from the tip and about 0.5mm one centimeter from the tip. Tall at 51.75" at the heel, there are few chopping, dicing, slicing or mincing tasks this one-of-a-kind blade won't tackle with ease. The beautiful koa wood handle is carved in Jelle's signature style and is accented with a Elofryn (eco-friendly ivory substitute) bolster.

The Story

Building each knife by hand in Ireland, Jelle Hazenberg, originally from the Netherlands, water-quenches his san mai blades finds optimal hardness and flex through carefully controlled heat treatment. Inspired by the cutting needs of his time spent processing large amounts of vegetables in commercial kitchens, Jelle is not only a talented artisan but also a chef that understands the needs of a daily-use culinary tool.
