Each blade from Bryan seems better than the last and this 200mm gyuto is no exception, beautifully balanced and with geometry that's ready for many hours of hard use, thin enough for detailed slices and with enough heft for every last chop. The Story

Heat treating with precision, water quenching, and finishing every detail by hand, Bryan Raquin's priority in each blade he creates is to attain optimal grain structure for a sharp, long-lasting and easily maintained edge. Working at his shop in central France, Bryan sources iron, wood and other materials from local reserves, reclaimed and upcycled whenever possible.
