Osage 3V Honesuki 123mm

A rare piece from knifemaker Ben Tendick, this honesuki with 123mm of edge, perfect for boning work and breaking down proteins, but also versatile and handy in any number of daily cutting tasks, is shaped using stock reduction from CPM 3V semi-stainless high carbon steel, an outstanding yet not often used steel for work-horse kitchen cutlery. The blade is ground flat and comes to a thin edge, stiff throughout, tapering from a wide 3.7mm spine at the heel to about 2.5mm an inch behind the tip. The osage orange handle with black G10 ferrule is rounded and contoured in a simple wa style, comfortable in the hand and offering a balance point just where it meets the blade.
