The undeniably classic European profile of this first chef knife by bladesmith Dan Prendergast is true to form and built uncompromisingly for function, the long, slim, only subtly curved carbon blade slimming to a fine point, beautifully tempered to provide just the right amount of flex. Hammered by hand at his ancient forge in south central England, Dan uses the simple, clean, high-quality Bohler K510 carbon steel from the Austrian producer Bohler-Uddeholm, similar to the popular 1095, the spine becoming increasingly slimmer from the integral bolster to about 3.3mm at the maker's mark, and down to just 0.9mm around an inch from the tip. Weighted superbly and balanced a hair in front of the blade's heel, this knife will find its place immediately in any kitchen. Sustainable African Blackwood from Mozambique is carved into an exceedingly comfortable handle to complete the package. An extraordinary knife from our newest maker.

We are excited and honored to welcome Dan Prendergast to the Eatingtools collection with this first full-size custom kitchen knife, a 240mm integral bolster chef. Dan's extensive and eclectic background in metalwork, which has included making piano pedal springs, copper hop boilers as well as ironwork conservation and restoration for Kensington Palace and Cantebury Catherdral, gives him the knowledge, perspective and experience to create culinary tools whose simple beauty is derived from a focus placed squarely on function and time honored, traditional techniques.
